The Louisiana Sweet Potato has a long and significant history in our great state. Since it is Louisiana’s largest vegetable crop, its economic impact is vitally important to the state as a whole and especially to rural communities where it is grown and processed. The on-farm value in 2013 was $48 million, which is nearly equal to all other vegetables grown in the state combined. But the Sweet Potato’s contribution to Louisiana is much more than just its economic value. Its long and storied history is as much a part of the culture of the Bayou State as Mardi Gras.
