Sweet Potato Souffle
2 1/2 cups cooked mashed sweet potatoes (about 3 sweet potatoes)
6 tablespoons butter, melted
1 cup sugar
1/2 cup whole milk
2 large eggs
1 teaspoon orange extract
1 teaspoon vanilla extract
1 cup firmly packed light brown sugar
1 cup chopped pecans
1/2 cup all-purpose flour
4 tablespoons butter, melted
Preheat oven to 350°. Lightly spray a 13x9-inch baking dish with nonstick cooking spray. Set aside.
In a large bowl, combine sweet potatoes. butter, sugar. milk. eggs, and extracts, beating at medium speed with an electric mixer until well blended. Pour sweet potato mixture into prepared baking dish.
In a small bowl. combine brown sugar. pecans, flour, and butter for topping. Sprinkle pecan mixture evenly over sweet potato mixture.
Bake until topping is lightly brown. approximately 35 minutes.
