Smoky Mashed Sweet Potatoes


8   cups peeled and chopped sweet potatoes (approximately 5 large sweet potatoes)

6   tablespoons butter, melted

1/4   cup heavy whipping cream

1/3   cup firmly packed light brown sugar

1 1/2   teaspoons salt

1   teaspoon smoked paprika

1/2   teaspoon ground red pepper


In a large Dutch oven, combine potatoes and enough water to cover. Bring to a boil over medium-high heat. Cook until tender, 15 to 20 minutes. Drain well.

In a large bowl, combine cooked potatoes and butter, mixing well. Beat potatoes at low speed with an electric mixer until only small lumps remain. Add whipping cream. Beat at medium speed until smooth. Add brown sugar, salt, paprika, and ground red pepper, beating until well combined.
