Sweet Potato Pizza

Here's a fun way to introduce this nutritious veggie to the kids. A pizza always gets their attention. Sprinkle with marshmallows and cinnamon instead of sugar for a variation.

Ingredients:

4-5 cups thinly sliced fresh sweet potatoes (yams)
1/4 cup light brown sugar
1 tsp ground cinnamon
1/4 ground nutmeg

Instructions:

Preheat oven to 400 degrees. Coat a 12-inch pizza pan with nonstick cooking spray. Arrange sweet potato slices to cover the pizza pan, overlapping the slices. Spray the slices with nonstick cooking spray. Bake 15 minutes. In a small bowl, mix together brown sugar, cinnamon, and nutmeg and sprinkle evenly over potato slices. Return to oven and continue baking until the potato slices are tender. Makes 6 to 8 servings
