Sweet Potato Chips by Juban's
Juban's Restaurant in Baton Rouge
Ingredients:
4 large sweet potatoes, peeled
2 quarts Peanut oil or Canola oil for frying
powdered sugar
Instructions:
Slice sweet potatoes about 1/6 inch thick, using a vegetable slicer or mandolin. In a 6-quart pot, heat oil to 300 degrees. Carefully place about 1/2 of the chips in oil, stirring to separate. They will float to the top within a short time. Cook until golden brown – be careful not to burn the chips. Remove the chips from the oil quickly and drain on paper towels. Repeat with the remaining sweet potatoes. Let cool, then dust with powdered sugar and serve.
Variations:
They may also be served plain or sprinkled with cinnamon or salt.
