Sweet Potato Casserole with Praline Topping
Ingredients:
3 cups fresh sweet potatoes, cooked and mashed or 2 (15 oz.) cans sweet potatoes, drained and mashed
1/4 cup sugar
2 tbsp. light margarine
1/2 cup egg substitute
1/2 cup raisins (optional)
1 tsp. Vanilla
Topping (recipe follows)
Instructions:
Whip potatoes while hot. Add remaining ingredients; mix well. Pour into greased casserole dish. Top with topping; bake at 350 degrees for 20-25 minutes. Makes 8 servings.
Topping:
1/2 cup brown sugar
2 tbsp. flour
2 tbsp. light margarine, melted
1/4 cup chopped pecans
