Sweet Potato Cornbread
2010 Sweet Rewards Recipe Contest 3rd Place in Professional Category
Ingredients:
Servings: 16-24
1 cup brown sugar-packed
1 1/3 cup white sugar
2/3 cup water
2/3 cup oil
4 lg eggs
2 15oz cans sweet potatoes, drained
2 cup all purpose flour
1 1/3 cup yellow corn meal
2t baking soda
1 1/2t salt
2t ground cinnamon
1/2t baking powder
Instructions:
Combine flour, cornmeal, soda, salt, baking powder & cinnamon in separate mixing bowl combine sugar, eggs, water & oil. Mix well, then add both cans of sweet potatoes, and mix well. Gradually add flour mix & cornmeal mixture til combined. Pour evenly into 2 greased 13x9 pans-glass or foil. Bake for 25-35 minutes at 350. Cornbread should be slightly browned on top. Serve warm with or without butter.
