Two Potato Roast
I turn to this so-simple-to-prepare side for a guaranteed hit. The proof: I never have any leftovers after making this dish. Any variety of potatoes may be used.
Ingredients:
I pound sweet potatoes (yams), peeled and cut into small chunks
1 pound red potatoes, unpeeled and cut into small chunks
1 tablespoon minced garlic
1/4 cup chopped green onions (scallions)
2 tablespoons olive oil
Salt and pepper to taste
Makes 6-8 servings
Instructions:
1. Preheat oven to 450 degrees.
2. In large bowl, combine all ingredients.
3. Transfer to baking sheet coated with nonstick cooking spray. Bake 40-50 minutes or until potatoes are browned, stirring potatoes every 15-20 minutes.
