Curried Rice and Sweet Potatoes
If you enjoy curry, this team of rice and sweet potatoes makes a great side dish. By including apples, raisins, and peas you have a variety of nutrients in one dish.
Ingredients:
1/2 cup chopped onion
1/2 teaspoon minced garlic
1 cup dry rice
2 cups water
2 cups peeled and diced sweet potatoes (yams)
1 cup peeled and chopped Granny Smith apple
1 cup frozen peas
1/3 cup golden raisins
1/2 cup walnuts, toasted
1 teaspoon curry powder
Salt to taste
Instructions:
In a pot coated with nonstick cooking spray, saute' the onion and garlic until tender. Add the rice, water, and sweet potatoes; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until the liquid is absorbed. Carefully stir in the apple, peas, raisins, walnuts, curry, and salt.
