Hearty Pork Stew
2009 SWEET REWARDS THIRD PLACE SOUPS
Ingredients:
2 Tablespoons olive oil1 medium red onion diced
1 cup finely shredded cabbage
1 pound lean ground pork
2 cans (14.5 ounces) low sodium chicken broth
1 can (15 ounces) great northern beans drained
1 can (15 ounces) cut yams
1 teaspoon lemon pepper
2 tablespoons corn starch
2 tablespoons fresh chopped chives
Instructions:
In large pot over medium high heat sauté the onions and cabbage until cabbage begins to wilt about five minutes.
Add ground pork hunks at a time. Stir to break up pork cook and stir occasionally for about five minutes. Add chicken broth, and beans. Turn heat to medium cover.
In food processor add yams and yam liquid, lemon pepper and the corn starch, process until yams are smooth. Stir yam mixture into cabbage and pork mixture. Mix well, turn heat down to medium low. Stir until mixture begins to thicken. Remove from heat stir gently.
Sprinkle with chives and serve.
MAKES 4-6 SERVINGS
