Savory Sweet Potato Stew

2009 SWEET REWARDS FIRST PLACE SOUPS

Ingredients:

1 tbsp unsalted butter1 tbsp olive oil
1 large onion, roughly chopped
2 carrots, roughly chopped
2 garlic cloves, minced
1 large bell pepper, roughly chopped
1 pound beef kielbasa, cubed
2 cans sweet potatoes, drained
1 large can beef stock
1/2 tsp salt
3/4 tsp pepper
1 1/4 cup raisins
2 tsp sweet paprika
1 tsp ground cumin
1 tsp cinnamon
1/2 cup honey
1 cup pitted green olives

Instructions:

In a crock-pot, combine all ingredients and let simmer on 225 (low heat) for 2 hours.
Serve alone or over rice.

MAKES 4-8 SERVINGS
