Critter Fritter
2009 SWEET REWARDS FIRST PLACE SIDES
Ingredients:
1 ¼ cup self-rising cornmeal mix
1 ¼ cup all purpose flour
¼ cup sugar
1 tsp salt
1 cup buttermilk
2 large eggs beaten
¼ cup vegetable oil
1 cup mashed Bruce’s yams
1 cup ground smoked pork
Peanut oil, for frying
Apple Honey Butter
½ cup softened butter
1 Tbsp. Honey
1 Tbsp Applesauce
Instructions:
Heat the oil to 325 degrees F. In a medium bowl combine the cornmeal, flour, sugar and salt. In a small bowl combine the milk and eggs. Add the milk mixture to the cornmeal mixture. Stir in the vegetable oil, yams and pork.
Pour peanut oil to a depth of 2 inches in a Dutch oven or use a deep fryer. Drop by spoonful into hot oil. Cook 2 to 4 minutes, or until golden, turning once. Drain on paper towels.
Serve warm with apple honey butter.
Apple Honey Butter:
Stir together butter, honey and applesauce. Put in a decorative crock or make into a log. Chill at least four hours before serving.
