2009 Sweet Rewards Recipe Contest Winner - 2nd Place, Breads & Breakfast
1 cup mashed canned sweet potatoes
6 tablespoons butter, softened
1/3 cup maple syrup
2 cups thick-cut oats (not quick-cooking oats)
1/2 cup golden raisins
1/2 cup chopped toasted almonds*
1/2 cup chopped toasted pecans*
1/4 cup whole wheat flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
Pinch of nutmeg
Preheat oven to 350 degrees. Spray a 15-1/2 x 10-1/2 inch jelly roll pan with cooking spray.
Place sweet potatoes, butter, egg, and maple syrup in a large bowl and beat with an electric mixer until smooth. Add oats, raisins, almonds, pecans, flour, cinnamon, and nutmeg, and stir until thoroughly combined.
Transfer mixture to prepared pan and smooth with a spatula. Bake approximately 40 minutes or until lightly golden brown. Remove from oven, allow to cool for 2-3 minutes, then cut into rectangles of desired size using a sharp knife. Transfer bars to wire racks to cool completely.
*To toast almonds and pecans, place nuts on a baking sheet and toast in oven at 350 degrees until fragrant and lightly browned, approximately 4 to 5 minutes, being careful not to let pecans burn. Transfer to a small bowl, and allow to cool.
