Sweet Potato Banana Bread
2008 Third Place Bread and Breakfasts
Ingredients:
2 cups all-purpose flour 480.967.5020
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter
½ teaspoon nutmeg
1 teaspoon cinnamon
2 eggs, beaten
¾ cups mashed overripe bananas
1 ½ cups canned sweet potatoes mashed
½ of the sweet potato syrup
1 cup brown sugar
½ cup pecans finely chopped
Instructions:
Preheat oven to 350◦ F (175◦ C)
Lightly grease a 9X5 inch loaf pan. In a large bowl combine flour, nutmeg, cinnamon, baking soda and salt.
In a separate bowl, cream together butter and brown sugar. Stir in eggs, mashed bananas, sweet potatoes and the reserved syrup until well blended.
Stir banana mixture into flour mixture; stir just to moisten.
Pour batter into prepared loaf pan. Mix together the 1 cup of brown sugar and the chopped pecans. Sprinkle on top of batter.
Bake in preheated oven for 60-65 minutes until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
