Quick Sweet Potato Pie

Move over pumpkin pie! This is a fabulous recipe for year-round use and a holiday treat.


1 cup fresh sweet potatoes (yams), cooked and mashed or 1 (15 oz,) can sweet potatoes, drained and mashed
2 tbsp. light margarine
1 large egg
1/2 cup light brown sugar
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 cup evaporated skim milk
1 tsp. vanilla
1 9-inch unbaked pie shell


Preheat oven to 375 degrees. In mixing bowl, beat together mashed sweet potatoes, margarine, egg, brown sugar, cinnamon, nutmeg, skim milk and vanilla until creamy. Pour mixture into pie shell. Bake 40-45 minutes or until set. Makes 8 servings.
