Candied Sweet Potatoes


2 cups grated, raw sweet potato (1 large potato)
1 cup milk
3/4 cup sugar
2 eggs
2 tbsp. melted butter or margarine
1 tsp. cinnamon
1/4 tsp. (or less) salt
Marshmallows for topping (optional)


In blender, mix milk, sugar, eggs, cinnamon, nutmeg and salt until sugar dissolves. Add chunks of peeled raw sweet potato and blend until sweet potato is consistency of grated coconut. Pour into well greased 1 1/2 quart casserole. Stir in melted butter or margarine. Bake uncovered at 350 degrees for 1 hour. May be topped with marshmallows and returned to oven till lightly browned.
