Sweet Potato and Vegetable Kabobs
These kabobs can be all veggies or you can add beef or chicken if desired. Not only do the sweet potatoes add a delicious taste, but they also add a beautiful, bright color to the kabobs.
Ingredients:
2 lbs. boneless, skinless chicken breast, cut into 1 1/2-inch cubes (optional)
2 lbs. sirloin tip, cut into 1 1/2 cubes (optional)
3 sweet potatoes, peeled and cut into chunks
1 pint cherry tomatoes
1 lb. mushrooms
2 bell peppers, seeded and cut into chunks
1 onion, cut into chunks
Orange and Wine Marinade (recipe follows)
Instructions:
Place the chicken, sirloin, sweet potatoes, tomatoes, mushrooms, peppers and onion in a large bowl and pour Orange and White Marinade over them. Refrigerate overnight or whatever time permits. Assemble the meat and vegetables on metal skewers, without crowding the pieces together. Grill on a hot grill for 10- 15 minutes, turning frequently. Baste with the remaining marinade while grilling. Makes 8 to 10 skewers.
Orange and Wine Marinade
1 cup dry red wine
1/4 cup reduced-sodium soy sauce
1 cup orange juice
1 tbsp. dried thyme
1 tbsp. dried rosemary
2 tbsp. Worcestershire sauce
1 tbsp. pepper
1 tbsp. minced garlic
Mix together the wine, soy sauce, orange juice, thyme, rosemary, Worcestershire sauce, pepper and garlic in a bowl.
