Tunk's Stuffed Sweet Potatoes

Tunk's Cypress Inn in Boyce, LA

Ingredients:

10 Baking size sweet potatoes, baked
16 oz. Brown sugar
1 cup white sugar
1/2 pound oleo, melted
1/2 tsp. cinnamon
1/2 tsp. salt

Instructions:

Scoop out potato meat and mix with all other ingredients. Re-fill the potato skins. Sprinkle topping on top (see below for the topping recipe). Bake for 20 minutes at 350 degrees.

Topping:
2 cups bread crumbs
1/2 cup melted butter
1 tsp. ground cinnamon
1 cup chopped, toasted pecans
