Exotic Shrimp Soup
1 ½ Cups chopped Roma tomatoes
1 Cup chopped onion
1 Teaspoon minced garlic
4 Cups fat-free chicken broth
2 Cups chopped, peeled, sweet potatoes (yams)
½ Cup chopped zucchini
1 Pound medium peeled shrimp
½ Teaspoon dried oregano leaves
1 Teaspoon coconut extract
½ Cup frozen pineapple juice concentrate, thawed
½ Teaspoon chipotle chili powder
1 Cup frozen corn Salt and pepper to taste
In large nonstick pot coated with nonstick cooking spray, saute' tomatoes, onion, and garlic 5-7 minutes, or until tender. Add chicken broth, sweet potatoes, and zucchini, bring to boil. Add shrimp, oregano, coconut extract, pineapple juice, and chili powder. Cook over low heat until sweet potatoes are tender and shrimp is almost done. Add corn and continue to cook 5 minutes. Chipotle powder is found next to chili is in the spice section of your grocery store and adds a hot smoky flavor. Chili powder may be substituted but I like keeping chipotle powder on hand to add whenever a recipe calls for chili powder.
