Creamed Double Potatoes


2 Pounds baking potatoes

1  Medium sweet potato (yam)

1/2  Cup light margarine

1  Cup skim milkSliced green onions, optional

Salt and pepper to taste


In large pot, cover both types of potatoes with water and boil for 40 minutes or until tender. Peel potatoes and place in bowl with margarine and milk. Beat until smooth. Season with salt and pepper and sprinkle with green onions if desired.
