Clegg's newest cookbook, The Holly Clegg Trim & Terrific Cookbook - Fast, Easy, and Healthy Recipes, is a collection of her favorite and most popular Trim & Terrific recipes plus many new ones. The cookbook contains more than 500 recipes designed to encourage healthy eating with great taste without the long preparation time. Besides recipes, the book also has sections for frequently asked culinary questions, a cook’s dictionary of terms and ingredients, a pantry stocking guide, a children’s chapter, low-fat recipe substitutions, and menus for all occasions.

For Meals On The Move, Rush Hour Recipes, Clegg collaborated with the American Institute for Cancer Research (AICR) based in Washington D.C. to provide the perfect balance between nutrition, taste, and ease of preparation. This quick and easy recipe book is designed to significantly lower the risk of cancer while fitting into today's busy lifestyle.

In 2001, Clegg teamed up with Dr. Gerald Milatello, a Baton Rouge oncologist, to write Eating Well Through Cancer, Easy Recipes and Recommendations During and After Treatment. In this cookbook, Clegg uses her expertise in recipe-development to recommend foods best tolerated during and after cancer treatment while staying true to her "no sacrifice to taste" philosophy.

When the Center for Science in the Public Interest ranked sweet potatoes (or yams) as the #1 most nutritional vegetable, Clegg saw Louisiana sweet potatoes as a perfect fit for her Trim & Terrific approach to cooking. In 1997, she became the national spokesperson for the Louisiana Sweet Potato Commission. "It is always fun to see how surprised people are when they find out that sweet potatoes are so nutritious and versatile," said Clegg. "Louisiana has always been known for its food, and people have always been interested in learning more about Louisiana cuisine.
