Bruce’s Sweet Potato Muffins
1 ½ Cups all-purpose flour
½ Cup sugar
2 Teaspoons baking powder
½ Teaspoon cinnamon
½ Teaspoon salt
1 Cup milk
½ Cup Bruce’s Mashed Sweet Potatoes
¼ Cup of butter, melted
1 Medium egg
¼ Cup finely chopped pecans
1. Preheat oven to 400F.
2. In a large mixing bowl, combine flour, sugar, baking powder, cinnamon, and salt. Mix thoroughly.
3. In a small bowl, combine milk, sweet potato, butter and egg. Add to the flour mixture and stir until lightly mixed.
4. Spoon mixture into greased muffin cups, filling each 3/4 full. Sprinkle 1 teaspoon of chopped pecans over each muffin.
5. Bake 20 minutes, then remove from oven and cool for minutes. Remove from pans and allow to completely cool on racks.
